Buttermilk Pancakes

Makes 4 to 5 Large Pancakes

1 cup All-purpose flour
1 Tbsp. Sugar
1 Tsp. Baking powder
1/2 Tsp. Baking soda
1/4 Tsp. Salt
1 Egg, beaten
1 cup Buttermilk, or 4 tablespoons Saco Cultured Buttermilk with 1 cup water
1 Tsp. Vanilla
2 Tbsp. Oil (or melted butter)


Sift dry ingredients together in a mixing bowl. Add egg, buttermilk, vanilla, and oil. Beat with a wire whisk until batter is smooth. Spoon mixture onto a griddle. When bubbles cover the top of the pancake, flip it over. Cook until underside is golden brown.
