Healthy Hobo Stew

Makes 8 servings

4-6 cups Potatoes, thinly sliced
1 package Lipton* Onion Soup Mix
1 lb. Honey Suckle White* Ground Turkey
2 cups cooked pinto beans or 
1 can pinto beans
1 package McCormick* Taco Mix
1 can Campbell's Healthy Request* Cream of Mushroom Soup
1 - 2 cups Kraft Free** Cheddar or 2% Cheddar

Preheat the oven to 400º.

Spread the potatoes in a lasagna pan and pour 1/2 cup water over them.  Then Either bake in the microwave until tender or in the oven for 1 hour.

While the potatoes are baking:

  1. Combine the Soup Mix with 1/4 cup of water in a small bowl.  
  2. Brown the turkey and drain the fat.  Stir in the pinto beans, the Taco Mix and 1/2 cup of water and simmer.

When the potatoes are tender, drizzle the onion soup over them.  Then spread the Cream of Mushroom Soup over them.  Then spread the meat and bean mixture over them.  Top with cheese and bake until cheese melts, 5 to 10 minutes.

* This brand was listed because it contains no MSG and was the brand used when the recipe was created.  (Since my husband is allergic to MSG, I make sure it isn't listed in the ingredients.)
** I use this because I have high cholesterol.

Tips

This is very different from the Hobo Stew that my Aunt made.  Below are some of the items that she used:

bulletRanch Style Beans instead of pinto beans
bulletRegular Campbell's Cream of Mushroom soup instead of Healthy Request
bulletGround Beef instead of Ground Turkey
