Mandarin Chicken Salad

This salad is not only tasty but low fat, very healthy,  and really easy to make.  You can choose how much effort to put in and how colorful you want to make the salad.  It has turned out wonderfully any way I have ever made it.  Enjoy.

Fills a Large Salad Bowl

1lb. Cabbage, shredded
1 lb. Chicken, cubed
1 15 oz. can Mandarin Oranges
1/2 cup Sliced Almonds, toasted
1/2 Purple Onion, chopped
1 can Chow Mein Noodles
Dressing

Toss all ingredients in a large salad bowl.  Toss in dressing to taste.  Serve immediately.  

Tips

bulletFor the cabbage, I use a bag of Coleslaw mix, or Angel Hair shredded cabbage, or about 1/2 of a cabbage. (Using a red cabbage makes a very colorful and pretty salad.  When using a red cabbage, I use 1 bunch of green onions.)
bulletFor the chicken, sometimes I use popcorn chicken or fajita chicken that I cut.
bulletYou may choose to use Ramen Noodles instead of chow mein noodles.
bulletIf you are trying to avoid the noodles, just have them on the side for people to mix in individually.

Dressing

This makes more dressing than you will probably use, but it keeps a while.

1/2 cup Olive Oil
1 Tbsp. Sugar
4 Tbsp. Rice Vinegar
2 Tbsp. Fresh Snipped Parsley
1 tsp. Salt
1/4 tsp. Coarse Ground Black Pepper
1/2 tsp. Dry Mustard

Mix all of the ingredients together in a jar or cruet.  Shake well before adding.
