Oatmeal Cake with Coconut Icing
Makes 12 to 15 Servings
| 1 cup |
Oatmeal |
| 1 1/4 cups |
Hot water |
| 1 |
Stick of butter |
| 1 cup |
Granulated sugar |
| 1 cup |
Brown sugar |
| 2 |
Eggs, beaten |
| 1 tsp. |
Vanilla extract |
| 1 1/3 cups |
Flour |
| 1 tsp. |
Baking soda |
| 1 tsp. |
Cinnamon |

COCONUT ICING (Below) |
Preheat the oven to 350º. Grease and flour a 13" x 9" cake pan.
Pour the oatmeal, water, and butter together, and let the mixture set for 20 minutes. Stir in sugars.
Add eggs & vanilla. Sift the dry ingredients and add them to the oatmeal mixture. Mix well. Bake for 30 minutes or until
the cake tests done. Coat it with coconut icing while warm.
Serve warm or room temperature.

Nuts |
Melt the butter. Stir in the brown sugar & milk. Add coconut & nuts. Spread it on the warm oatmeal cake.
Place it under a broiler until the top is brown.
