Sweet Potato Casserole

Makes 12 Servings

2/3 cup Butter, softened
2/3 cup Packed brown sugar
2/3 cup All-purpose flour
2/3 cup Oats
1/2 tsp. Cinnamon
1 cup Fresh Cranberries
2 23 oz. cans of Sweet potatoes (Yams)
Marshmellows

Preheat the oven to 375º.

Mix the butter, brown sugar, flour, oatmeal, and cinnamon in a medium to large mixing bowl.

Drain both cans of sweet potatoes. Pour one can into a 2 quart pyrex bowl, and spread evenly. Add 1/2 of the crumb mixture to the potatoes. Pour the rest of the potatoes in the bowl, and spread evenly. Top with 1 cup or more of fresh cranberries and the remaining crumb mixture.

Bake uncovered for 30 minutes or until berries are done. Top with marshmellows and broil until golden brown.

Tips

bullet If using a gas stove, make sure the flames are not too large on the broil setting. The marshmellows may catch fire.
